Do you add water to your apple cider vinegar when making it? We've noticed that quite a few other companies do.
No, we wouldn't do that to you! As we do our own initial fermentations, we can control alcohol levels to then turn to a perfect pH level for our vinegar, giving you 100% ACV in the bottle! Our pH's can vary up to 0.2 from batch to batch. Others may try to create a high level pH (nearing battery acid) then dilute with water to achieve pH level, but this means that a good quantity of that product could be water (which is never good!).
Is your tonic gluten free?
Yes, all of our tonics are completely free from gluten.
What do you mean by “wild yeast fermented”?
When apples grow on trees they build up a layer of natural yeast on the skin. To start the process we juice the apples keeping the wild yeast in the juice which then starts to eat away at the sugars converting them to alcohol. We also don't use any preservatives or additives during this process. This is the most natural way of fermenting fruit.
What is "the Mother"?
Mother of vinegar is a substance composed of a form of cellulose and acetic acid bacteria that develops on fermenting alcoholic liquids, which turns alcohol into acetic acid with the help of oxygen from the air. It is added to alcoholic liquids to produce vinegar. In unfiltered apple cider like ours, the mother - and its beneficial bacteria and acids - remain. Our Mother has been cultivated over 8 - 9 years.
So it's not the energy drink you buy at the supermarket?
No. Absolutely not.
Is your product pasteurised ?
No, they are not pasteurised. We believe in keeping all of the good stuff in, so we use a cold infusion method.
Do we use preservatives?
No, we don’t. Nasty things, those preservatives!
Whats the history behind the tonics?
All of our tonics are based upon age old recipes from all over the world, with our own little native Australian twist.
Our healthy tonic is a nod to the "fire ciders" from the USA that have been used for hundreds of years. Some believe that it was a way for people to preserve ingredients for times of need, but then the discovery was made that they weren't getting sick or suffering ailments when drinking the preserving liquid.
Are your tonics and vinegars organic?
All of our products use organic produce if seasonally available but they are not certified. We try & source our produce from local farmers/growers where we know there has been no or minimal use of sprays/sulphites.
Are all of your products unfiltered?
Yes they are. We believe that a heap of the goodness lies within those bits that get filtered out so we just go direct from the tank to the bottle! Just make sure you give the bottle a shake each time you use it.
Do your tonics vary in flavour?
Yes they can do from time to time, as we use seasonal whole ingredients they may vary in taste a wee bit, but not too much.
What is a tincture?
Tinctures are liquid extracts made from herbal, fruit or vegetable infusions, in either ethanol or apple cider vinegar. The purpose of a tincture is to draw out all of the amazing properties of the ingredients that have been put in there, to give you one incredible elixir of life.
